Away from home : Pineapple Tarts

Its ridiculous to have to make my own pineapple paste. Its so much trouble.....
First you'll have to blend them, then save the juice and cooked them into paste.......sound like very easy rite??? Can u imagine cooking this pot of pineapple juice...until it turn into paste ??

[The pineapple pulp from the blender...cooked together with a stick of cinnamon and 2 pieces of cloves, and of course, a cup of caster sugar).



[This is how the pulp looks like after an hour of cooking.....still very gooey.....)




After about close to 2 hours of cooking, it finally has a paste like consistency.....but still very much more gooey compared to those ready made paste that I'm used to.



Well, the cookies turn out alright......and I have to improvise, in shaping them....because I realise i have no cookie cutter or piping tube in Adelaide..........

Honestly, its a lot of hardwork......
