Cooking Experience @ Lafite, 2008 - by Chef Damen Campbell - Finale

THE GRAND FINALE - DINNER

A whimsical menu, park on each seat.....

Eyes wide with delight.....you'll be seated and served with a glass of Moet, to compliment the Caviar Doughnut. To0 delighted that, no pic of caviar doughnut. Really nothing to shout about. Its just a small lil ring of a doughnut, with sprinkles of caviar , flavoured garlic.....tasted more like a mini bagel, as commented by one of our fellow dinner mate.


The walnut bun, is surprising soft and tender, despite the rocky outlook......and the herb-ed butter complimented the bun well...


Decided to snap a photo of JS, with a fellow foody, which I shall refer to as Mr. A (really, didn't get his name....). Mr. A proclaim that he'll love to cook, given the fact that cooking food(rather than baking) give him more room to explore different combination of flavours, textures and last but not least, the presentation, the colour, and the aroma. Well said.
Yeah, actually, i think they both look good in their "cool black outfits", seated next to each other....they actually look like they come from some Mafia family....maybe if they have sunglasses on....hmmm....lol

Essentials : A glass of water. Guess why you need a glass of water...when they serve you wine?

Well, its good to have a drink, to clear your palate...after tasting a dish. So you'll be ready for the next......

Next, came Vapourised Scallop....
The scallop is steamed in a ceramic bowl with some kind of savoury broth.....and no, upon the pouring of the bitter orange brine on the side of the dish, the scallop did not magically vapourised as the name suggest....... The "vapour" is merely referring to the refreshing orangy zesty aroma...that came from the piping hot bitter orange brine.....
Warning was issued, that none of us should try the brine....because, its REALLY BITTER (nope...i didn't try it..)

The scallop on top a bed of soft and silky pasta, shaped like big fat rice......I forgot what's they called it.

After the Vapourised Scallop, they finally served us ....the Foie Gras....

The Chef simply called the dish "Foie Gras Volume"

The big fat piece of foie gras...with cherry spaghetti (ya, tat worm like thing is actually a strand of spaghetti), sourish sweet cherry.....with the fragrant...melt in your mouth foie gras....kekekkekeke. I love this......


The main dish, as shown above......is called "Beef Brocolli". Nope...no brocolli in sight.....the only thing that's related to brocollin in his dish, is the brocolli puree sauce, use to outline the brown sauce. There's a mesh of , erm...i think its pumpkin, a square of potatoes, nicely layered...you can actually feel the texture...and the piece of succulent beef. Nope, i didn't get to ask what kind of cut, or what kind of beef it is......yeah, and a few stalk of asparagus on the side.

By the time we finished this, I'm actually quite full........

But nothing will stop me from eating dessert....there's always room for dessert. Plus, the dessert of the day, Twisted Black Forest Cake.

I'm intrigued.......how twisted it can be?? Well, to my disappointment, the twist is not in the taste, but in the presentation...... look and you'll understand :


Pretty brilliant, I'll say.....the twisted block, is actually a firm and chocolaty mouse.....and the 2 red dollop are actually cherry (taste like raspberry though) sorbet.....and sprinkles of chocolate crumbs (I supposed the crumbs should represent the "cake"?)....and sourish cherry sauce here and there.......
To make it a Black Forest Cake, most of us on the table agree tat we should just mess everything up and eat it together .......not very pretty...but yeah, it tasted quite good.

We thought that was it........but Mr. Damon must be in the mood to pamper us..

They then served us coffee......and this :

hehehe...ok, I'm the one with shaky hand (hence the blurred pic)......the red puffs are cotton candy, flavoured with sweet and sourness of plum, the bottom of the tree, are filled with chocolate leaves. One bite on the chocolate leaves, you'll find that they are actually crispy waffles, covered with chocolate.
Each course, is paired with wine...we have 1 glass of Moet, 2 white, and 1 red.....
I slept like a baby that night....dreaming of the dark black forest, lighten up by the bloom of sakura....lol....ridiculous?? Nah..just being drama...but anything is possible in a dream...
